What vegetables are important for our health?

Áll vegetables are important because they all contain many minerals and acids, in various combinations. The body needs these different minerals and combinations of minerals and acids to absorb nutrients.

The bacteria and fungi in vegetables are also important for our intestines, ensuring proper digestion. Unfortunately, current cultivation methods are such that there are minde rminerals in the admittedly beautiful-looking vegetables than there used to be. This is another reason why large amounts of vegetables and lots of variety are important.

Also important is that the vegetables should not be cooked out, this removes almost all the good substances that the vegetables have. Therefore, heating briefly in a wok is better or frying briefly with a lid on the pan so that the heat and steam stay in the pan.

The importance of vitamin D3: Vitamin D3 is made by our skin under the influence of sunlight, and vitamin D3 is necessary for the absorption of calcium. The foods from which we can get a lot of vitamin D are fatty fish, cod liver oil, eggs and (fatty) meat.

Vitamin K2 is found in foods, not in vegetables but in foods such as natto (fermented soybeans), cheeses, egg yolks, grass-fed butter, chicken livers and organ meats. Vitamin K2 ensures that calcium gets to the right place: in the mitochondria and in the rest of the body.

In summary, the following four points will help you prevent calcium deficiency:

  • Healthy food, lots of vegetables, and very few sugars and refined carbohydrates (which are mainly found in processed foods).
  • Provide extra minerals in the diet by drinking bone broth, drawn from organic bones, for example.
  • Take a supplement that is balanced and ensures that all minerals are absorbed.
  • DO NOT suddenly start drinking a lot of milk or ingesting a lot of calcium-containing products, these upset the balance, therefore a calcium deficiency will occur!
